These chocolatey cocoa cookies are like those big tasty cookies that you see at coffee shops that are just begging to be dipped into a cup of tea or coffee! These are grain-free and have a nice soft texture. Enjoy!
Cocoa Cookies (grain free):
Makes about 8 large cookies
1 cup almond flour
1/2 cup cocoa powder
2 tbsp coconut flour (where to buy coconut flour)
1/3 cup coconut sugar
1/4 cup ground flax seeds
1/2 tsp baking soda
1/4 tsp salt
1/2 tsp vanilla extract
1/2 cup coconut oil (where to buy coconut oil)
1 pastured egg
1. Pre-heat oven to 350°. Combine ingredients in a bowl or mixer/food processor. Make sure that the coconut oil is melted (76°).
2. Shape dough hunks into balls and flatten and form into large circles on a cookie sheet lined with parchment paper or a silpat (I always use a silpat for baking, it makes for easy cleanup and is reusable).
3. Bake for about 6-9 minutes. Cookies will be firm.
